Understanding animal metabolism and paving the way for the future of meat and eggs

Nutrition plays a very important role in the healthy development of livestock animals and in maintaining human health. Its role is diverse and can be divided into 1) nutrients essential for growth and maintaining health, 2) food components related to taste and palatability, and 3) food components with strong physiological effects. In our laboratory, we aim to conduct research on the above three points using animals (chickens, quails, mice, and rats) and cells, and to propose new concepts in nutritional physiology.
